Chef Bret Barton’s Watermelon Salad with Citrus-Mint Vinaigrette

Ingredients

1/2 cup white balsamic vinegar or rice wine vinegar
Zest of 1/2 lemon
1 tablespoons fresh lemon juice
Zest of 1 lime
1 tablespoon fresh lime juice
5 fresh mint leaves, thinly ++sliced
3 tablespoons maple syrup
2 tablespoons Dijon mustard
1 teaspoons kosher salt
3/4 cup extra-virgin olive oil

Instructions

First make the vinaigrette: Combine all the ingredients in a large jar with a tight lid and shake until well combined.
